A Salad Dressing to Blow Your Mind

Creating your own #lettucegravy is easier than you'd think. Be prepared though...you may want salad every day after this.
Salad is such a quintessential dietitian dish. No matter where I go to eat, if I don't choose salad, leave it to someone to comment, "Wait, aren't you a dietitian? Shouldn't you be eating salad?". Ugh.
Truth be told though, I adore a good mix of greens with all of the things. I'm never bored when my bowl is glittered up with a confetti of colored veggies, cranberries, feta cheese and avocados. Love.
Now, how can I go and cover up a bowl of my sacred veggies with store bought dressing? Wah, wah wah...no, nope. I'm going to be a food snob for a sec. If you don't make your own dressing, whooooaaaaaaa are you missing out! The flavor is out of bounds and YOU get to control what you're tasting. That, I love.
Rarely do I have patience for keeping a gadget in my kitchen that is only used for one purpose, but I adore having a Magic Bullet blender for my dressing making. It pulverizes everything, making each bite covered with every flavor. YUM!
So, here is the BEST salad dressing of all time. The end.
THE DRESSING TO END ALL DRESSINGS!
Into the container of your blender or Magic Bullet, add:
3 crushed fresh garlic cloves (None of that pre-smushed garlic please. Just, no.)
2/3 cup freshly squeezed lemon juice (No buying pre-squeezed juice in a bottle.)
1 1/3 cup avocado oil
1/3 cup freshly grated parmesan cheese
1 Tbsp dijon mustard
1/2 Tbsp kosher salt
1/2 tsp freshly ground black pepper
Blend this all together until smooth and BAM! You'll have the most delicious, creamy, garlicky, lemony goodness that you can imagine.
