I adore salad. Classic dietitian line, I know. As you may have seen in a previous post, I love to make my own dressing. I enjoy choosing the oil, being in control of the flavors, the salt. It's really fun to me to throw a bunch of ingredients together to create a magic when added to a pile of plants.
I have a bit of an obsession with cilantro. I cannot get enough. It's a regular on my grocery list and I buy it weekly, whether or not I have a plan for it. I will find a way. Sort of like our good friend, Dr. Ian Malcolm says in Jurassic Park, "life finds a way". Yeah, cilantro finds a way for me.
So - that said, sometimes I want a creamy dressing, something with a little bit of a bite and a tang, loads of fresh herbaciousness and the cooling factor of my creamy component: greek yogurt.
So, without further adieu, I give you my newest creation:
Ingredients:
1/3 poblano pepper
5 peeled garlic cloves
1 cup of fresh cilantro (stems included)
1/4 cup of FRESHLY squeezed lime juice
7oz. plain, greek yogurt (I used a 7oz cup of 5% Fage plain Greek)
1/2 cup avocado oil
3/4 tsp kosher salt
1/4 tsp black pepper
Directions: Super simple. Combine all ingredients in a blender, such as a Vitamix or a Ninja and blend until smooth.
DONE!
If you like cilantro, make this ASAP - it changes everything for me. I put it on so much! It lasts in the fridge in a jar for about a week or so!
